  • 1 lb fresh shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt
  • 1 cup shredded cabbage (green or purple)
  • ½ cup mango or pineapple chunks
  • ¼ cup red onion, diced
  • 1 jalapeño, finely chopped (optional)
  • Juice of 1 lime
  • 8 small corn or flour tortillas
  • ¼ cup sour cream or Greek yogurt
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a pan over medium-high heat. Add shrimp, chili powder, garlic powder, cumin, and salt. Cook for 3-4 minutes per side until pink and opaque.
  2. In a bowl, mix cabbage, mango (or pineapple), red onion, jalapeño, and lime juice.
  3. Warm the tortillas in a dry skillet or microwave.
  4. Assemble tacos by adding shrimp and slaw to each tortilla. Top with sour cream and fresh cilantro.
  5. Serve immediately with extra lime wedges!
